Bacon-stuffed porkchops... a real taste delight

A few days ago my wife made a phenomenal dinner and I just thought I'd share it with you. This was one of those Sunday dinners that made me say "Honey, we have to share this recipe with our customers" --- so here it is:
Bacon-stuffed porkchops... a real taste delight
Bacon-stuffed Pork Chops
You'll need...
6 porkchops
bread (8 pieces)
4 strips of bacon
1/2 cup cheese ( I used old cheddar but you can use your favourite)
1 onion
3 cloves garlic
1/2 cup butter
1 green pepper
2 celery stalks
3 tsp parsley
2 tsp sage
2 tsp thyme
1/2 cup to 1 cup water (or chicken broth)
salt/pepper season to taste
Step 1.Cook up your bacon. You'll use 4 strips to stuff the pork chops, but we like to cook a few more pieces to place on top at the end as a nice detail to the pork chops.
Step 2. Make a bread stuffing: For a good stuffing, bread should be dry. Spread slices out on a baking sheet and leave on the counter overnight or toast in the oven at 350F (180C) for 5 to 10 min. Meanwhile, chop celery and onion. Mince garlic. Melt butter in a large frying pan over medium heat. Add vegetables and garlic. Stir often until tender, 7 min. Meanwhile, tear or cut bread, including crusts, into large cubes. Place in a very large bowl. Sprinkle with herbs and seasonings. Stir to evenly distribute. Then stir in celery-onion mixture and just enough water (or you can use chicken broth) to moisten bread. Turn into a baking dish and loosely cover with foil. Bake for 15 min. Then remove foil and continue to bake until crusty on top, about 10-20 min. Let cool for 5-10 min and then add bacon chopped up into pieces to the stuffing. Stir in the cheese to the stuffing mixture.
Step 3. Lay the chop flat on cutting board, and with a sharp knife held parallel to the board, cut a pocket into the pork, going all the way to the bone, but leaving the sides intact. Stuff cheese mixture into pocket, and close with a wooden toothpick.
Step 4. Season each side of pork chop with salt and pepper and brown both sides in a pan on the stove.
Step 5. Lightly grill on stove to brown each side of the pork. Once browned place pork chops into a shallow baking dish and cook covered for 20 min at 350. Take off cover. Cook for another 5 minutes.
Step 6. Place extra bacon on top and serve.
That's it! The most important part of this recipe is of course the pork. The reason it tastes so good, I think, is because our pigs are very unique. Not just because they're certified organic, but also because they're soy-free, raised outside on the pasture, and in the sunshine. Plus, because our pigs are an old-fashioned heritage breed, they have a healthy layer of nutrient-dense fat, loaded with vitamins A and D. Happy pigs, healthy fats, delicious meat.
